Tempura Battered Rainbow Smelt - 11 pounds.  Box contains a plastic bag with all the smelt so you can take whatever quantity you need. 

Wild caught Great Lakes rainbow smelt (osmerus mordax) number 1 quality, headless, cleaned and quick frozen. Smelt are medium sized but grading for smelt is a bit rough and varies so I'm not giving measurements. 

Get the fryer ready for a smelt fry. They are prebreaded so that saves a step in the cooking process. 

Cooking Recommendation: Deep fry. Preheat to 365 degrees F and cook for about 3 mins or desired shade of brown.

I usually order the regular smelt but it was oos so I ordered the battered style. I found it to be a little bit heavy on the batter for our taste. It was just heavy enough battered to drown out the crisp flavor of the smelt for us. Some may enjoy it but we will stick to the regular smelt when available.
